Veal sweetbread

  • 2 kg sweetbreads
  • Rock salt & pepper
  • Water
  • 2 Garlic cloves
  • Thyme and rosemary
  • Chickpea flour
  • Clarified butter
  1. Start to cook the sweetbreads slowly in cold water with seasoning
  2. When the water is boiling wait for 2 minutes then remove from heat and cool on the side for 15 minutes
  3. Remove the skin and clean them
  4. Keep the trimmings and roll the sweetbread with pepper on the presentation side
  5. Put them on ice
  6. At the last minute before cooking, dry and roll the sweetbread in the chickpea flour
  7. Cook in clarified butter slowly until a nice colour
  8. Chop up the trimmings and cook the same way
