Looking for the perfect side dish or vegetarian option? Confit vegetables are perfect to have all you vegetables full of flavors.

  • 4 carrots
  • 2 turnips
  • 2 celeriac
  • 100 g Brussels sprouts
  • 5 jerusalem artichokes
  • 3 parsnips
  • 4 garlic cloves
  • 2 red onions
  • Olive oil
  • Salt/ pepper
  1. Peel all vegetables
  2. Cut vegetables into smaller pieces for larger vegetables such as carrots, celeriac and turnips to ensure cooking will be even for all vegetables.
  3. In a mixing bowl, add all the vegetables, olive oil, salt and pepper
  4. Mix together to ensure all vegetables are covered
  5. Place in an oven dish and cook in the oven for 20 minutes at 180 degrees
